- Organic Corn Meal - 1 cup
- Gluten Free All Purpose Flour - 3/4 cup
- Organic Cocounut Sugar - 3 1/2 tbsp.
- Baking Powder - 2 tbsp.
- Sea Salt - 1/2 tsp.
- Xanathan Gum - 1/2 tsp.
- Egg Replacer - equivalent to one egg
- Unsweetened Dairy Free Milk - 1 cup
- Coconut Oil - 1/4 cup
Preheat over to 400 degrees. Combine all dry ingredients into a bowl. Combine al wet ingredients in a separate bowl. When thoroughly mixed, fold liquid into dry ingredients. Stir just enough to mix (don't overmix!)
Pour into greased/floured muffin tins and bake for about 18 minutes. Allow to cool for at least 5 minutes before removing from tin. Serve with Earth Balance or just eat them plain!
