I love squash in the Fall and one of my favorites is spaghetti squash. What a fun texture! It’s also a great lower carb substitute for pasta…and packs more nutrition, to boot! Here’s a simple and tasty combo I came up with the other night.
1 medium to large sized spaghetti squash
1package of tempeh bacon
1 Tbs. olive oil
2-3 cups fresh greens – I used a combination of red and green chard, and baby kale. Spinach would work great, too!
1/2 c ginger-miso broth *You can buy it already made from Trader Joe’s in a paper carton or you can make your own- simply add 1/2 teaspoon of miso and 1 tsp. of grated ginger to almost boiling water and stir! You could also use vegetable broth or even just water if you prefer!
Your favorite tomato sauce – could be homemade, but if you’re like me and time is always a factor, go for a high quality organic jar sauce.
Vegan parmesan or nutritional yeast (*optional)
Start by preheating oven to 350 and poking holes as best as you can with a fork all over the squash – to keep it from exploding during cooking! Place squash in a lightly sprayed (or otherwise lightly greased) glass casserole dish or on a baking sheet – no need to cut the squash- just put it in whole and cook for about an hour or an hour and 10 minutes (depending on size of squash). It will be infinitely more easy to cut once it’s cooked!
Once the squash is cooked, split it the long way down the middle and scoop out seeds. It will be super hot so be careful! Then take a fork and lightly scrape at the squash meat – it will easily flake into long skinny “spaghetti” strands.
In the meantime heat the ginger-miso broth in a large frying pan, throw greens in and cover. Once liquid is absorbed move greens to a dish, drizzle with olive oil and set aside.
Add olive oil to pan and cook tempeh bacon a few minutes on each side until crispy. Remove from pan and cut into one inch pieces.
Fill bowl with spaghetti squash and top with tomato sauce. Top with greens and tempeh bacon. Finish with a sprinkle of vegan parmesan or nutritional yeast.
