Sometimes I come home from a long day and I just don’t want to cook. And I especially don’t want to have to clean up a big mess afterwards! For times like these, my go to is a simple one pot pasta dish. I literally don’t get anything dirty except for one pot, a spoon, utensils and whatever I choose to eat it on (yep, sometimes it’s a paper plate)! It’s ready in about 10 minutes and it’s supremely delicious. Often my husband will exclaim (with a huge happy smile) I thought you didn’t want to cook tonight!
Here’s how I do it.
Your favorite pasta (about 3/4 of the box for two big plates…I know, it’s probably too much but I’m Italian!)
2 Tbs. vegetarian chicken broth powder
2 Tbs. Earth Balance or other non-dairy butter
2 Tbs. extra virgin olive oil
1 clove garlic, chopped (totally optional if you just don’t feel up to it!)
1 or 2 handfuls broccoli (fresh or frozen, both work great!)
2 Tbs. Nutritional Yeast (optional but delish and gives a health boost!)
2 vegan meatless patties (vegan sausage, vegan burger, etc.) or 4-5 vegan meatballs (optional but delish and gives a protein boost!)
What to do:
Start boiling water. Throw the vegan meatless patties or meatballs in the toaster oven. Chop up the garlic. Dump in the pasta when water boils.
When pasta is nearly cooked (about 2 minutes to go), throw in the broccoli. Cook for another 2- 3 minutes. Drain and return to pot. Throw in garlic, butter, olive oil & veggie chicken broth and nutritional yeast. Stir until everything’s well coated. Grab your meatless patties or vegan meatballs out of the oven (careful if they’re hot!) and crumble into pot (Note: I actually love to crumble vegan meatballs but I slice up patties-you can do either!) Stir again. Add salt and pepper to taste…and…voila! Instant totally satisfying, hearty, delicious and nutritious meal!
