This is such an easy and yummy salad. People love it- especially when you tell them there’s no oil. Not that there’s anything wrong with oil or fat- but it’s nice to have a slim option for summer! This works great at barbecues and parties – it’s a tasty yet healthy alternative and people love having a vegan, soy-free option!
This salad is “self-dressing”, so just throw all the ingredients in a bowl, stir it up and let it sit in the refrigerator for a couple of hours before you serve. You won’t believe how great it tastes!
2 cans of black beans – make sure you drain them and rinse them well, otherwise they will be too soupy!
one medium red onion, chopped
one red pepper and one yellow pepper, chopped
four to five stalks of celery, chopped
2 avocados, peeled and chopped
2 cloves of garlic, chopped
about one cup (packed loosely) of fresh cilantro, chopped
1/2 cup of balsamic vinegar
Throw everything in the bowl. Stir in the balsamic vinegar and coat well.
Season with sea salt and black pepper. Cover and allow to sit in fridge for 2-3 hours before serving.
* You can add some chopped tomatoes if you’d like, however I find they tend to create a lot more juice and also tend to get soggy. I prefer it without.
