I’ve been trying to eat more veggie only meals – at least once/day, like at lunch, skipping the grains and just eating vegetables. Sometimes I really don’t feel satisfied eating just a plate of greens or a salad though. But a huge bowl of cauliflower…that somehow does it for me. I think it’s the creamy consistency. Here’s my favorite recipe. It tastes so delicious and it’s so easy; I walk away feeling totally satisfied!
1 head of cauliflower, chopped up.
3/4 Tbsp. curry powder (I’ve been using Muchi Curry by Whole Pantry), more to taste
1 Tbsp. Earth Balance
1 tsp. Olive oil (optional but it tastes really good!)
½ tsp. garlic salt
Juice from one lemon – start with just one half and taste before squeezing in the other half!
Cut up cauliflower and place in pot with about ½ to ¾ of an inch of water on the bottom. I’ve been using a deep frying pan so I can actually have all the cauliflower spread across the pan in more or less one layer, that way it all cooks evenly. Cover cauliflower with a lid and let it cook until all the water is absorbed (about 5 minutes) – but be careful not to burn! It should be cooked perfectly just as all the water is almost totally absorbed- and you won’t lose the nutrients the way you would if you boiled them and dumped the water. (You could choose to steam them, but I don’t think they’d have the same soft texture. You want them to be tender but not totally mushy).Dump cooked cauliflower into a deep bowl. Add olive oil and earth balance and mix. Add curry powder, garlic salt and mix. Add lemon. Taste. Add more lemon and/or salt if you want and enjoy!
