I just love oat groats as a warming breakfast treat on a cold morning. Oat groats are much healthier than oatmeal, as it is the entire unhulled, unprocessed oat. It is filling and delicious, as well as high in iron. I especially love the texture, which remains firm and plump, and the slightly nutty taste.
1 c oat groats (they sell them in bulk at my Whole Foods!)
2 c water
pinch of sea salt
tsp. of curry powder (I use Muchi Curry from Whole Pantry)
1 Tbsp. Earth Balance (optional-they taste good without it but of course better with it!)
Combine oats, water and salt in pan and boil. Turn down heat and simmer, covered until all water is gone. Stir in Earth Balance and curry powder. Enjoy!
