This is my go-to thing to bring when going to a party or gathering. It’s super easy, the colors are festive and everyone seems to enjoy a healthy option!
nuts (pine nuts, walnuts or pecans all work great)
tomatoes (or clementines are nice too!)
1/4 c extra virgin olive oil
fresh garlic (about 2 cloves)
fresh lemon juice (two small lemons)
sea salt & pepper
Mix dressing and pour over salad. Toss thoroughly. Allow to sit (in refrigerator) for at least a couple of hours for the flavors to meld.
